Grandma Moss’ Breakfast Casserole
Prepare night before & refrigerate:
Spray one 9” quiche dish with cooking spray
Layer: 1 bunch green onions – diced
5-6 pieces pork sausage & 2-3 small pieces ham (Canadian bacon or other substitutes)
1 14 oz. can stewed tomatoes (with onions, peppers, & celery). 1 small can mushrooms if desired.
Batter: Combine 5 large eggs, 2 T milk, 2/3 C Bisquik, 1 tsp oregano, & pour over
layered mixture.
Top with 2 C Colby/Monterrey Jack Cheese.
In the morning: Preheat oven to 350. Bake about 45 minutes or until golden brown.
Serve with salsa, fruit plate, muffins, orange juice & coffee. Serves 6
